Simple Vanilla cake


Preparation Time: 45 min
Baking Time: 30 min
Serves: 10

Ingredients measure:-

For Batter:
All purpose flour(Maida): 150gm
Baking Powder : 2 tsp
Beaten Eggs(Room Temp) : 3
Vanilla Essence: 1-2 tsp
Unsalted Butter: 100 gm(room temp)
Sugar: 150 gm
Warm Water: 1 cup



Preparation:-

1)      Preheat the oven to 200 degrees.
2)      Sieve maida and baking powder thrice.




3)      In a mixer or beater, mix/beat butter and sugar to a paste consistency.
4)      Spoon in the vanilla essence and whisk.



5)      Pour the beaten egg and mix/beat well.
6)      Spoon in the sieved contents half portion at a time and mix/beat well.





8)      Grease the baking tray and pour in the final batter.
9)      Bake in Convection mode for 180 degrees and  40 mins.
10)  Allow the microwave to stop completely and then only take the cake outside.



11)   Vanilla cake is ready.


Note:- Special care should be taken while selecting the ingredients, all the ingredients should be at room temperature. Otherwise the cake will sink.(Don’t take it out of fridge and mix immediately).Make sure you sieve the maida, baking powder mixture sieve thrice to blend well.

Chicken Pot Roast(Indian Version)


Preparation Time: 60 min
Cooking Time: 50 min
Serves: 8

Ingredients measure:-

For Masala:
Kashmiri Red Chilly powder: 2 tbsp
Turmeric Powder : 1 tsp
Small Onion :  2 cups
Pepper: 1 tbsp
Ginger garlic Paste : 2 tbsp,
Green chillies: 5 medium
Cumin: ¼ tsp
Curd: 2 tbsp
Pudina Leaves(Mint): 2 cups
Garam masala: 1 tsp
Chicken Masala(any branded one):1 tbsp
Butter: 2 sticks-approx 25gm
Salt: to taste

Basil Leaves: 1 cup
Butter: 3 sticks(approx. 50 gm)
Chicken : 2 kg with skin.
Olive Oil: 1 tbsp




Preparation:-

1)      Grind the items under masala to a fine paste in a mixer.
2)      Clean, wash and drain the chicken thoroughly in lime and vinegar.



3)      Make cuts over the skin with a knife so that the masala goes in well.
4)      Marinate the Chicken pieces with the masala mix prepared.
5)      Also stuff masala under the skin by making pockets in between skin and flesh.
6)      Stuff Butter and masala inside the chicken too.
7)      Stuff Basil leaves too inside the skin pockets. Drizzle lime juice all over the chicken.



8)      Keep it marinated for 10 mins or store in freezer for 2-3 days if not using it at the moment.
9)      Microwave it in convection and grill mode in 600w for 25 mins  each side for better cooking.(after 15 mins take it out flip it and microwave for another 25 mins)


10)  Chicken Pot Roast is ready and serve it hot with mint sauce.


Note:- Once it is warm u can cut it with a knife or you can pull it as it’s soft. You can also put cut potatoes, Onion and garlic cloves inside chicken and microwave.

Cheese cake(Orange Flavour)


Preparation Time: 40 min
Baking Time: 30 min
Serves: 10

Ingredients measure:-

For Crust:
Arrow Root/ Marie Gold Biscut: 1 pck- 128gm(I used orange flavored one, so the orange color)
Powdered Sugar : 20 gm(take 20gm of normal sugar and pulse it in mixie)
Salted Butter:3/4 stick or 70 gm.

For Filling:
Cream cheese: 360gm (2 pcks 180gm each)
Powdered Sugar : 150gm(medium sweet, you can increase the grams if more sweetness needed)
Beaten Eggs(Room Temp) : 2
Vanilla Essence: 1 tsp
Orange Essence: 1 tsp











Preparation:-

1)      Preheat the oven to 200 degrees.
2)      In a freezer bag, dump in the arrow root biscuits and mash it to fine pieces with a roller(you can also mash it in a mixie).
3)      Mix the mashed biscuits with powdered sugar and melted- salted butter with a spoon.
4)      Take a spring form pan or Apple pie pan and spread the mix into it.
5)      Press it evenly with a spoon or hand to finish the crust levelling.
6)      Keep it in the fridge for 5mins.
7)      At the same time, Whisk the beaten egg and sugar to make the filling.
8)      Whisk it for a good amount of time and spoon in the above essence and whisk.
9)      Pour in the cream cheese and whisk again.
10)  Take the crust out of the fridge and pour in the final filling batter over the crust.
11)  Keep it again in fridge for another 5 mins.
12)  Bake in 180 degrees for 30 mins.
13)  Allow the microwave to stop completely and then only take the cake outside.
14)   Orange flavoured cheese cake is ready.
15)  Take a tin and keep the keep the apple pie tin above to pull down the side tray(if using spring form pan just open the sides to release the side cover of the pan.
16)  Keep it in the fridge and serve to get a better taste.


Note:- You can decorate with different toppings/ sauce for an improved result.

Dark Chocolate Frosted Vanilla cake


Preparation Time: 50 min
Baking Time: 40 min
Serves: 10

Ingredients measure:-

For Batter:
All purpose flour(Maida): 150gm
Baking Powder : 2 tsp
Beaten Eggs(Room Temp) : 2
Vanilla Essence: 1-2 tsp
Butter: 100 gm(room temp)
Sugar: 150 gm
Warm Water: 1 cup






Preparation:-

1)      Preheat the oven to 200 degrees.
2)      Sieve maida and baking powder thrice.
3)      In a mixer or beater, mix/beat butter and sugar to a paste consistency.
4)      Spoon in the vanilla essence and whisk.
5)      Pour the beaten egg and mix/beat well.
6)      Spoon in the sieved contents half portion at a time and mix/beat well.
7)      Add in the extra cup of warm water and whisk well.
8)      Grease the baking tray (I used heart shaped mould tray) and pour in the final batter.
9)      Bake in 180 degrees for 40 mins.
10)  Allow the microwave to stop completely and then only take the cake outside.
11)   Vanilla cake is ready.
12)  Microwave the dark chocolate for 1 min and mix in 50gm of butter and whisk.
13)  Add 3 tbsp of icing sugar to the frosting mix and whisk again.
14)  If needed shave the top layer a bit and grease the prepared chocolate frosting generously.
15)  Decorate with pista or any nuts according to your wish.

Stuffed Apple


Preparation Time: 20 min
Baking Time: 15 min
Serves: 8
Ingredients measure:-
For Filling:
Moosambi grated: 1 cup
Bannana Chopped : 1 cup
Apple Flesh : ¾ cups


Apple : 2
Parmesan or mozerella cheese : 1 cup grated
Maple or any other sweetener syrup : 2 tbsp






Preparation:-
1)      Half the apple and take out the flesh so that it forms a base for the filling.
2)      Keep it aside.
3)      Mix the fillings together and slightly mash it with hand.
4)      Pour maple syrup in the apple base and spoon in the filling.
5)      Top it with chopped banana and parmesan or mozerella cheese.
6)      Bake it in 180 degrees for 15 mins.
7)      Serve hot.

Orange Cake


Preparation Time: 60 min
Cooking Time: 55 min
Serves: 8

Ingredients measure:-
For Batter:
All purpose flour(Maida): 150gm
Baking Powder : 2 tsp
Beaten Eggs(Room Temp) : 3
Vanilla Essence: 1 tsp
Orange Zest(cover) : 2 oranges
Orange Juice :  2 oranges
Butter: 100 gm(room temp)
Sugar: 150 gm



Preparation:-
1)      Preheat the oven to 180 degrees.
2)      Sieve maida and baking powder thrice.
3)      In a mixer or beater, mix/beat butter and sugar to a paste consistency.
4)      Pour in the beaten egg and mix/beat well.
5)      Spoon in the essence and beat well.
6)      Put 1 tbsp of sieved contents and beat before putting the zest to avoid chances of curdling.
7)      Put the orange zest and beat well.
8)      Spoon in the sieved contents in portions and mix/beat well.
9)      Finally pour in the orange juice and fold in layers.
10)  Grease the baking tray and pour in the final batter.
11)  Bake in 180 degrees for 45 mins.

Loaf Bread

Loaf Bread

Preparation Time: 1 hr 45 min
Baking Time: 25 min
Serves: 8

Ingredients measure:-
For Dough:
Active Dry Yeast : 2 tsp
Sugar : 1 tsp
Warm Water: 1 cup

Maida(All Purpose Flour):2 cups
Butter: 2 tbsp
Milk: 2 tbsp
Warm Water: ½ cup
Sugar: 2 tbsp

Butter: enough for greasing
Maida: enough for Greasing





Preparation:-

1)      Soak dry yeast in warm water with sugar for 15 mins or till the upper layer turns frothy.
2)      Mix Butter,Milk,Warm Water and sugar together and combine it with the frothy yeast.
3)      Ladle in the Maida and make a soft dough.
4)      Cover and keep it for 45 min-60 mins.
5)      After 1 hr we can see that the dough has gone to double measure.
6)      Cut it into two and level it into two greased loaf tray.
7)      Bake each in 180 degrees for 25 mins.
8)      Cool and serve.
